Dumm Pukth Biryani
A classical dish of either marinated spring lamb or chicken cooked in its juices with basmati rice. The ingredients are flavoured with mint and saffron and cooked in "Dumm" – a process whereby the lid of the pot is sealed with dough so that none of the rich aromas are released in the final baking. Accompanied by a cool chutney of smoked tomato with onion, chillies and tropical lime juice.
